Air fryer ground beef: golden meatballs in the open basket of an air fryer, one of them cut in half

There’s no denying how handy ground beef is when you want something tasty and quick. And choosing ground beef comes with a bonus: depending on the cut, it can be very healthy and help with your diet, since it’s rich in protein and can be lean, depending on the cut. When I combine that with air fryer cooking, I also get the convenience of skipping the mess of cooking on the stove.

Here are 6 air fryer ground beef recipes that take the meat still raw, already seasoned and shaped, straight into the basket. It works as long as the meat holds a shape, like meatballs, burgers, kofta, a meatloaf roll or a thin layer spread over bread. Set it between 350 and 400 °F (180 and 200 °C) and plan on 10 to 25 minutes, depending on size and thickness.

Crumbly, browned ground beef is still better in the skillet, and the step by step is in these ground beef recipes for dinner.

What works and what doesn’t

An air fryer cooks with hot air circulating around the food, so it works best with meat that keeps its shape. Loose in the basket, ground beef crumbles, dries out and even slips through the holes, which is why the skillet wins in that case. Shaped, it browns on the outside, stays juicy inside and needs almost no extra fat.

What changes from one recipe to the next is the time, and it depends on three things: the size of the meatball, the thickness of the meat layer and what goes in with it. Vegetables that release water, like tomato and bell pepper, also slow the cooking. So treat the times below as a starting point and check the basket before the timer runs out.

One rule applies to all of them: raw ground beef has to cook all the way through. The USDA recommends 160 °F (71 °C) in the center. A kitchen thermometer checks that in a few seconds and is more reliable than judging by color, which can fool you. And mix the meat with your hands until the seasonings are spread through the whole mixture.

6 air fryer ground beef recipes, from the simplest to the most elaborate

1. Meatballs

Mix 500 g (1 lb) of ground beef with 1 egg, 2 crushed garlic cloves, salt, black pepper and 2 tablespoons of breadcrumbs or flour. Grease your hands with olive oil and roll small balls, about ¾ oz (20 g) each, because the smaller they are, the faster they cook.

In the air fryer: 350 °F (180 °C) for 5 minutes, flip the meatballs and cook 5 to 10 more minutes, leaving space between them (base recipe from Receiteria, in Portuguese).

For stuffed meatballs, make larger balls, flatten each one into a little disc, place a small cube of mozzarella in the middle and close it up again. Since they are bigger, the time goes up to about 20 minutes at 400 °F (200 °C) (Receiteria, in Portuguese). When in doubt, cut one in half before serving.

2. Homemade burgers

Mix 500 g (1 lb) of ground beef with 1 tablespoon of grated onion, ½ teaspoon of salt, black pepper, and cumin and oregano to taste. Shape four patties and put them in the freezer for at least 15 minutes, which is what keeps the meat in one piece when you flip it in the basket.

In the air fryer: 400 °F (200 °C) for about 12 minutes, flipping halfway. With four patties, the easy way is to cook two at a time (TudoGostoso, in Portuguese). The buns can go in the basket for a minute or two at the end to toast.

3. Kofta

Kofta is a cousin of the burger, only elongated and much more seasoned. The reference recipe I found uses 1 kg (2.2 lb) of lean ground beef, 1 packet (about 2 oz / 60 g) of dry onion soup mix, 4 garlic cloves, scallions, parsley, 5 large mint leaves, ½ teaspoon of smoked paprika, black pepper, lemon pepper and a pinch of cinnamon.

Mix everything, shape it into sticks, grease the basket with a little olive oil and cook at 350 °F (180 °C) for 15 minutes (Receiteria, in Portuguese).

4. Meatloaf roll with ham and cheese

For a single piece to slice, season 500 g (1 lb) of ground beef with 1 packet of dry onion soup mix, 3 garlic cloves, fresh herbs and salt. Without the soup mix, an egg helps bind the meat, and if it turns out too soft, 2 tablespoons of flour fix it.

Spread the meat on parchment paper or foil in a layer about ½ inch (1 cm) thick, cover with 100 g (3.5 oz) of ham and 150 g (5 oz) of mozzarella, and roll it up using the paper. The roll has to fit in the basket, so measure before you close it.

In the air fryer: preheat for 5 minutes at 400 °F (200 °C) and cook the roll for 25 minutes, until nicely golden (TudoGostoso, in Portuguese).

5. Bread rolls stuffed with ground beef

Here the bread acts as the mold and the meat becomes the filling. Mix 300 g (10 oz) of ground beef with 3 tablespoons of chopped onion, 1 teaspoon of smoked paprika, salt, black pepper and chopped parsley or scallions. Use 3 crusty white rolls (the Brazilian pão francês, or any small baguette-style roll). You can pull out the soft center or, as in the base recipe, press the crumb inward without tearing the crust. Then stuff the rolls, pressing the meat in to fill them completely.

Cut the stuffed rolls into thick slices and place them in the basket without overlapping. In the air fryer: 350 °F (180 °C) for 10 minutes, carefully flip the slices and cook 10 more minutes (TudoGostoso, in Portuguese).

6. Pita bread topped with raw ground beef

This is the one trending on social media, and I tested it in my own air fryer. Season raw ground beef with tomato, bell pepper and onion cut into very small pieces, plus salt and pepper, and spread it directly over the pita bread in a layer about ¼ inch (0.5 cm) thick, like a small pizza. I made it without cheese on top.

In the air fryer: 400 °F (200 °C) for 10 minutes, and keep an eye on it so the edges of the bread don’t burn. Because the meat layer is thin, it overcooks quickly, and this is the best moment to check with the thermometer.

Which recipe to pick for the night

On nights when time is short, the pita and the burgers are the quickest to put together, and the burgers, which need the freezer, can be shaped ahead of time. With small kids at the table, small meatballs help, since each one is a single bite, and you can stuff them with mozzarella. When company comes, the meatloaf roll and the kofta go further and look good sliced.

There is one limit we tend to forget: the size of the basket. In a compact air fryer, the burger and stuffed-roll recipes come out in two batches, and crowded meat steams instead of browning. Leave space between the pieces, and for more ideas, these air fryer recipes organized by prep time help fit dinner into your week.

How to avoid dry or raw ground beef in the middle

Meat that is too lean dries out before the fat melts, and a layer that is too thick can stay raw in the center. In the recipes I consulted, chuck is the most recommended cut for burgers, precisely because it has more fat (ground chuck is typically around 80/20), and you can also mix a premium cut with a cheaper one to balance flavor and juiciness.

Two habits help a lot: greasing your hands with olive oil when shaping, and letting larger pieces, like the meatloaf roll, rest for about 5 minutes before cutting so the juices don’t run out. And the thermometer always goes into the thickest part of the piece.

Still have questions?

Do I need to preheat the air fryer for ground beef?

If your air fryer has the function, it is worth preheating for 5 to 10 minutes, which is what the meatball, burger and meatloaf roll recipes I consulted ask for. The meat starts picking up heat right away and browns better on the outside.

Do I need to oil the basket?

A little. The recipes use a drizzle of olive oil on your hands or in the basket, as in the kofta, because the meat itself releases fat as it cooks.

Do vegetables make the meat watery?

They release water, yes, which is why the pita with tomato, bell pepper and onion needs more time than it would with just seasoned meat. Without the vegetables, it should cook faster, so start checking early. Chopping everything very finely also helps.

To wrap up

Air fryer ground beef works when the meat goes in raw, seasoned and shaped, and the time changes with the size of the piece. Pick the recipe based on the time you have, check the basket before the timer ends and confirm with a thermometer. The browned, crumbly version stays in the skillet.
