It’s six thirty in the evening, the kids have already asked twice what’s for dinner, and the only thing you remembered to take out of the freezer this morning was that pack of ground beef. Every parent knows this scene, and the good news is that ground beef can solve it, because few meats are as quick and as easy to stretch as this one.

The quickest ground beef recipes all start from one base: beef browned with onion and garlic. From that base come spaghetti bolognese, ground beef with potatoes, a Brazilian-style cottage pie, fried rice, wraps, stuffed zucchini and other ideas that fit a weeknight dinner.

Why ground beef saves so many weeknight dinners

The reason is simple: since the meat is already finely minced, it cooks much faster than a steak or a whole cut, and it goes with almost anything in the fridge. Grated carrot, zucchini, corn, peas and tomato blend in and disappear into the sauce, which helps a lot with kids who turn up their noses at vegetables.

But because it is ground, the meat is handled much more than a whole cut, so it needs care when thawing and cooking.

The base: browning ground beef the right way

For a family of four, I would start with 500 g (about 1 lb) of ground beef, one medium onion, four garlic cloves, salt and a drizzle of oil. If you can, have the onion and garlic chopped before you turn on the stove. It’s the old mise en place trick for the home kitchen, and it keeps you from rushing to chop something that should already be in the pan.

  1. Thaw it ahead of time. The good practices booklet from Anvisa, Brazil’s health regulatory agency, advises against thawing food at room temperature: the meat goes from the freezer to the fridge the day before, or into the microwave if it is going straight into the pan.
  2. Heat the pan and oil well before adding the meat. If you have more than about 1 lb, do it in two batches, because a crowded pan won’t create that crust that makes the meat tastier.
  3. Add the meat and leave it alone for a minute or two. Then break it up with a wooden spoon or a fork, pulling the clumps apart little by little.
  4. When the liquid from the meat dries up and it starts to brown, add the onion. The garlic goes in after, because it burns quickly, and the salt goes in at the end.
  5. Cook until there is no pink left. This isn’t a steak, where you can choose well done or rare. Ground beef always needs to be fully cooked, almost crispy.

And if you make a double batch, you can save part of it for another day. Further down I explain how to freeze it without mistakes.

10 easy ground beef recipes for dinner

They all start from the browned base, and the times in the table are approximate, counted from that point, because they vary with your stove and pan.

RecipeWhat goes in besides the baseApproximate time
1. Spaghetti bolognesePasta and tomato sauce15 to 20 min
2. Ground beef with potatoesDiced potatoes and water20 to 25 min
3. Brazilian cottage pie (escondidinho)Mashed potato or cassava and cheese30 to 40 min
4. Ground beef fried riceCooked rice, egg and vegetables10 min
5. Wrap or crepeTortilla or crepe, lettuce and tomato10 to 15 min
6. Stuffed zucchiniZucchini and cheese25 to 30 min
7. Lasagna bologneseLasagna noodles, cheese and sauce25 to 30 min
8. Ground beef with vegetablesCarrot, green beans and chayote15 min
9. Stuffed omeletEggs and leftover base10 min
10. Vegetable soup with ground beefPotato, carrot and small pasta25 to 30 min

1. Quick spaghetti bolognese

Bolognese is the classic. While the pasta water boils, add tomato sauce to the browned beef and let it simmer over low heat. If you have a ripe tomato lying around, chop it and add it too, because it gives color and a more homemade flavor. When the pasta is al dente, drain it and toss everything in the sauce pan so the pasta soaks up the flavor.

2. Ground beef with potatoes

If I had to pick just one for the busiest night of the week, it would be this one, because everything goes in one pot. Cut two or three potatoes into small cubes, add them to the base with water until almost covered and put the lid on. When the potatoes are tender, uncover so the sauce thickens. With rice and beans, as we eat it in Brazil, the meal is complete.

3. Brazilian cottage pie (escondidinho)

Here the base becomes the filling for one of the most comforting dishes in Brazil. Spread the meat in a baking dish, cover it with mashed potato or mashed cassava and top with grated cheese to brown in the oven. It’s also a great way to use up leftover mashed potatoes from lunch, and you can assemble it in the morning, keep it covered in the fridge and only put it in the oven at dinnertime.

4. Ground beef fried rice

Got leftover rice from yesterday? In a large skillet, mix the base with the cold rice, a scrambled egg and whatever vegetable you have on hand, like corn or peas. In a few minutes you have a dish kids usually like, and the rice gets a second life without looking like leftovers.

5. Ground beef wraps or crepes

For a different dinner with no extra effort, warm up tortillas or make crepes, fill them with the meat and top with lettuce, chopped tomato and a little cheese. Since everyone builds their own, the cook works less and dinner is more fun.

6. Stuffed zucchini

Cut the zucchini in half lengthwise, scoop out the flesh with a spoon and chop it into the base so nothing goes to waste. Fill the halves, top with cheese and bake until the zucchini is tender.

7. Lasagna bolognese

Cook the lasagna noodles ahead of time, following the package instructions. A good tip is to use oven-roasted eggplant slices instead of pasta. Then make a tomato sauce, store-bought or homemade, and mix it with the ground beef base. Build the lasagna in layers in this order: a little bolognese sauce, noodles (or eggplant), sauce again, mozzarella to taste, noodles (or eggplant), and so on until you reach the top of the dish. Finish with white sauce and more cheese to brown. This recipe is one of the suggestions in our cheap weekly meal plan, and the others are worth a look too.

8. Ground beef with vegetables

This is the most complete version of the base. Add diced carrot, green beans and chayote, cover and let them steam in the pan juices until tender. If you have vegetables about to go off in the crisper drawer, now is the time to use them, and to keep them fresh until recipe day, see how to store vegetables in the fridge.

9. Omelet stuffed with ground beef

When two or three spoonfuls of the base are left over, they become an omelet filling. Beat the eggs, pour them into the skillet, spread the meat on top and fold. It’s the emergency option, for days when the fridge is almost empty and nobody has the patience to wait.

10. Vegetable soup with ground beef

On a cold day, the base goes into a bigger pot with potato, carrot and water. When the vegetables are soft, add a handful of small pasta, and it’s ready. Of all of them, the soup makes the most and freezes well, so one pot already gets another dinner ahead.

How to adapt them to your family’s routine

When there are kids at the table

Set aside the kids’ portion before adding pepper or stronger seasoning, and go heavy on very finely grated vegetables, which disappear into the sauce. Serving the same base in different dishes, like wraps one day and cottage pie the next, usually works better than always insisting on the same dish.

When you want it to go further

Ground beef goes further when it shares the pan. You can use a little less meat and make up the difference with grated carrot, zucchini or corn, and the dish becomes more nutritious as a bonus.

When the goal is a balanced week

Ground beef is practical, but it doesn’t need to be at every dinner. In the sample meals of the Dietary Guidelines for the Brazilian Population, from Brazil’s Ministry of Health, red meat is limited to a third of meals, with a preference for lean cuts and grilled or roasted dishes. In practice, you can alternate with eggs, chicken and beans and save the ground beef for the busiest days.

When time is short

The most useful shortcut is to cook a double batch of the base. Half goes into tonight’s dinner and the other half becomes a ready portion, so on a busy day you just reheat it and pick what to make.

How to store and freeze ground beef safely

  • Raw meat in flat portions. Freeze it in food-safe bags, with enough for one meal in each. Flattened, it thaws faster in the fridge, and you don’t need to thaw a 2 lb block to use half.
  • Fridge and freezer at the right temperature. The Anvisa teaching guide on health surveillance recommends keeping the fridge below 5 °C (41 °F) and the freezer at minus 15 °C (5 °F) or colder.
  • Cooked meat in closed containers. As soon as it stops steaming, divide it into containers and put it straight into the fridge or freezer, without leaving it to cool on the counter for hours. Anvisa’s booklet for food services mentions up to 5 days for dishes kept at 5 °C (41 °F) or below; at home, where the door opens all the time, I would eat it sooner.
  • Name and date on everything. It seems silly until the day a mystery container shows up at the back of the freezer and nobody knows how old it is.

In this system, the container makes a difference, because if it leaks or cracks in the cold, the ready portion becomes a problem.

Still have questions?

Which cut should I ask the butcher to grind?

In Brazil, patinho (similar to top round) and acém (chuck) are common everyday choices. Top round is leaner and cooks up drier, while chuck has a bit more fat and stays juicier in sauce. If you can, ask for it to be ground fresh, in front of you.

Why does ground beef release water in the pan?

Almost always because the pan wasn’t hot enough or too much meat went in at once. The temperature drops and the meat ends up stewing in its own liquid. If that happens, turn up the heat, let the water evaporate and only then season.

Can I cook loose ground beef in the air fryer?

You can, but for loose browned beef a pan is usually more practical, because you can stir and break up the meat easily. The air fryer works better for shaped ground beef, like meatballs, burgers and kibbeh. I put together six of them, with times and temperatures, in these air fryer ground beef recipes.

To wrap up

Ground beef recipes get quick when everything starts from the same base, browned in a very hot pan and cooked until no pink is left. Make a double batch, store the leftovers the right way and pick today’s dish from the list above.
